This is a refreshing cookie without any chocolates. It’s also a good way to sneak in some fiber to your cookies, thanks to whole oats and fresh carrots. Please expect that these are not gooey cookies at all. Just plain chewy.
A carrot cookie was the first thing that came into mind when we were planning our Easter product. We wanted it to be something more exciting than a plain cookie, so we decided to make it a sandwich, filled with homemade cream cheese frosting.
Make sure to keep this refrigerated since it has cream cheese. We like serving it straight from the fridge, too, so that the soft cream cheese frosting doesn’t slide out. If you want to share a piece with someone, it’s easier to slice it with a sharp knife rather than breaking it apart by hand like we do with other cookies. It’s a chunky, chewy cookie!
